For this months Cheese of the month, we have chosen this beautiful Scottish cheese, Corra Linn.

Errington’s Corra Linn is a rich mix of brothy umami flavours anchored with a familiar floral zing. The texture is an eclectic mix of a crumbly Manchego, Pecorino and Parmesan. Made by Selina on Errington Farm in Lanark, Scotland, she uses a Manchego recipe with the milk from her 450 Lacaune Sheep. This truly something special!

The flavours are lightly floral and brothy, with savoury notes of roast lamb. Corra Linn has a feathery, slightly grainy textured paste and when chewed, the cheese has a creamy and succulent texture which is truly irresistible.

In addition, with this being a Scottish cheese, Corra Linn is the perfect addition to your Scottish cheese boards for ‘Burns Night’ on the 25th January.
